Brown Butter Chocolate Chunk Cookies

  • Unsalted butter200g
  • Dark brown sugar150g
  • Caster sugar80g
  • Large egg + 1 yolk1
  • Vanilla extract1 tsp
  • Plain flour250g
  • Bicarbonate of soda1 tsp
  • 70% dark chocolate, chunked200g
  • Flaky sea salt, to finish1 pinch

Method

  1. 01

    Brown the butter in a light-coloured pan until it smells nutty and the milk solids turn deep amber. Cool for 10 minutes.

    Whisk the browned butter with both sugars, then beat in the egg, yolk and vanilla until glossy.

    Fold in the flour, bicarb and a pinch of salt, then the chocolate chunks. Chill the dough for at least 30 minutes.

    Scoop 60g balls onto a lined tray, spaced well apart. Bake at 180°C for 11–12 minutes until the edges are set but centres still soft.

    Bang the tray on the counter for that crinkled look. Finish with flaky salt while warm.
